We are going to make the most of it….

We’ve had the rain we have been wanting and the sun has come out again.It’s such a beautiful summer. I’m sitting here in the office with the door open, sun shining and the birds are singing outside. I must keep this feeling alive for the winter, when I’m miserable, cold and often soaked to the skin.

This is the perfect weather for living and eating outside, so we are going to make the most of it.Menu ideas for this weekTurkish flatbreads with beef mince, herbs and spices

This is a BBC recipe, my “go to site” when I can’t think what to cook, and it’s quick and easy.Beef sausage tray bake.It literally is a one tray bake. I use beef sausages, potatoes, onions, other veg if I have leftovers; like pepper, courgette, beans  or similar. Season with salt and pepper and herbs. Hot oven for approximately 35 minutes but turn the sausage and veg a couple of times to colour them during this time. Then 5 minutes before the end drizzle a couple of tablespoons of runny honey and 4 tsp of mustard over the sausage and veg mixture. Toss this around and return to the oven for the last 5 minutes cooking.

A one tray meal perfect for supper outside.Lamb koftas: BBQ or grill then serve with salad and a yogurt mint dip.I’m going to make a quick bean and garlic soup too. It’s handy for lunch or a late supper.Eggs salad or egg and tomato sandwiches or if I’ve got time, a twice cooked soufflé.Banana splits for a treat.
