This week I can’t say I’m skipping along with enthusiasm and excitement. The weather forecast for the rest of March and the beginning of April is rubbish. Cold, wet and dull. Not good for growing or lambs and calves.
There’s no frost forecast but it seems to be raining everyday. The whole team here work hard and often in unpleasant conditions like mud and rain and even snow so we really enjoy the warmer weather when you don’t need several layers and waterproofs and wellies. Beef olives Italian styleGreat in the slow cooker or in a casserole dish in the oven. If you’re using the oven have it with baked potatoes or cook some for a later meal in the week to reheat to make use of the oven being on. I made an apple crumble too whilst the oven was on and the beef olives were cooking.
Chilli con carneCourgette quiche with cheesy pastry. Or courgette fritters, add a little chilli if you like them spicyGreat for lunch boxes or a quick supper. Make it ahead.Broccoli soup with cheese on toast.Onion and lentil curryAny leftover veggies can be roasted and used in a quick lasagna or frozen for a later dish…Apple crumble. Make them in ramekins so you can freeze any extras and you’ve got a quick pud ready to grab if needed on an extra busy day.Beth
