Roast lunch that basically looks after itself is called for….

It’s Easter weekend and it can feel a little bit like the pressure is all on the cook…..so let’s keep it simple so you too can enjoy the long weekend ( if you’re having a break).  Sunday lunch is the focal point of this Easter weekend so a tasty, easy, roast lunch that basically looks after itself is called for. Slow roast, pulled pork with beetroot tray bake. Serve it with baked potatoes or roasties or even simpler as big pulled pork sandwiches.

Make the tray bake ahead and reheat it if you want to but if you prep it ahead and put it in the oven half an hour before you want to serve that works best for me. It takes the same time as you leave the cooked pulled pork to rest.You will need;A big oven tray or roasting dishOven at 200 CBeetroot, scrubbed and sliced into wedges from the boxFennel or courgette, thickly sliced, from the box2 tbsp of organic harrisa or pesto1 x 400g tin of organic chickpeas drained and rinsed1 x 400g tin organic chopped tomatoes3 tbsp of organic olive oilSalt and pepperMix all these to get her and pour into the roasting dishRoast for 25 to 30 minutes or until the beetroot is tender. You might need to add a half cup of water if it dries out too quickly.Mix a dressing of 3 tbsp of organic tahini with 3 tbsp of water and 4 tbsp of organic lemon juice. Drizzle this over before serving and top with chopped chives. This beetroot dish also makes a great brunch served with poached eggs and flatbreads.The forecast for the weekend is looking a lot better so it might mean we can all enjoy a little bit of sunshine and light outside.We’re still lambing and calving so our Easter lunch will be served later in the day but we will be enjoying coffee and cake outside mid day if the weather allows.
