The weather is turning, with cooler mornings and the day’s slowly shortening. Part of me is ready to work shorter days and slow down, part of me is disappointed. We really haven’t had much of a summer.
A fabulous hot and dry spring was followed by a cool and wet summer. Not ideal growing conditions however I don’t feel I made the most of the lovely hot weather that we did have. I was in a kind of limbo waiting for summer and somehow I feel I missed it, almost just let it slip through my fingers. Well with this in mind I’m going to really enjoy the autumn. I’ll enjoy the change in colours in the landscape and the cool bright mornings, just like this morning. I’m going to have my first coffee outside with the dogs before the hustle and bustle of the work day begins and just enjoy watching the autumn take hold.
I’ve a list started of all the preparation jobs I need to get done like I back the flower borders, mulching and edging. I really want to enjoy the process of preparing for winter so I can enjoy that too. Not to mention getting a nice stash of split logs ready for the fires.
Menu ideas for this last week of August Fajitas using half of the stir fry beef strips. Using lots of chilli, garlic and spices Homemade flat breads, cucumber and carrot salad, a green salad and grated cheese. Sausage casserole. Packed full of fresh organic veg and some tinned beans. I just use what I have. Perfect one pot mid week meal Quick stroganoff. Using the rest of the beef strips. Serve with rice or crushed herby roast potatoes. If you don’t like stroganoff make a quick goulash with the beef strips. Giant Yorkshire puddings with savoury mince and onions and roasted carrots. Make extra Yorkshires and serve them with stewed fruit and ice cream and toffee sauce if you have it.Beth
