….and just like that January is behind us.

And just like that January is behind us. I always feel like “I’ve made it” through January.
It’s my most difficult month. The days are dark and cold and often wet too. But here we are in the fist week of February. I know it’s still winter but there are a few delicate signs of spring. A few snowdrops, the evenings are definitely getting a little lighter and it’s no longer dark when I get up.

We’ve started planting and sowing too. We’re planting hedges, which is a perfect time for us to plant trees here. The plants are still dormant and the ground is moist so the plant will get going and growing before the drier weather comes and then its roots will be more established and able to find moisture for itself.

Here are some menu ideas for the week

Leek gratin with a breadcrumb topping
Pork steaks with creamed cabbage and mashed potatoes
Minced beef chilli
Fennel and apple salad with lemon and ginger dressing. Great stuffed in pitta bread with leftover chilli
Egg curry with onion bhaji
