I feel like I’m running, running, running, running…..

I feel like I’m running, running, running, running. I bet this sounds familiar to many of you. There is just not enough time in the day. And looking back I felt the same at about the same time last year. The season is just starting to wake up and already I have the feeling of being ever so slightly behind. I know I will catch up, or prioritise some jobs but the usual chores still have to be done. So this is a shout out to all the folks out there who, in the run up to Mother’s Day, have mothering/ caring roles. The school picker uppers, the oldies visitors, the dinner makers, the dish washers, All of you. In fact everyone who is a little bit stretched in time and effort.

I’m really looking forward to the clocks going forward. That little bit of extra light gives me a bit more energy and enthusiasm. March has been cold wet and dark. I’m excited about eating meals outside and the change in the season. This weeks menu ideas focus on late suppers and Sunday dinner.Roast beef with Yorkshire puddings and steamed kale and root mashMince and onion pie with leek au gratinGolden beetroot tarte tatin. Top with a little goats cheese and serve warm for a late supper.Stuffed cabbage rolls, using the mince or a lentil and veg optionLeftovers omelette with bubble and squeakBlood orange upside down cake.Enjoy.Beth
