Making the most of your Box…..

We are starting to get into our Autumn routine now on the farm.

There is still plenty of sowing and planting out to do but plans are in place for winter salads to go into the tunnels and turkeys are scratching around and moving onto beds that have had summer crops in and now need clearing to replant. Pigs and sheep have a place in this clearing of vegetable beds but they are a little more tricky to keep in so they’ll be used on the beds with more secure fencing and hedges to avoid disaster!

It’s a beautiful time of year with lots of produce to pick and harvest and lots of delicious meat too.

I know most of you will know that I prep my veg etc from the box all at once. So I wash and box the lettuce into the fridge. Clean and chop carrots, slice onions and prep up the rest of the veg. My potatoes I clean and chop into a bowl of water and keep them in the fridge. This way everything is ready to use in the fridge and it makes meal prep much quicker. Anything I don’t use can be put in the freezer for use in a soup or stew later. It really means you get the most from your veg box and there is very little waste.So this week I’m planning on making;Toad in the hole with the venison sausage. Add a good dollop of horseradish or mustard to the Yorkshire pudding batter to give it a little kick.The Yorkshire pudding recipe is on the website. Serve this with some steamed greens and onion gravy.Sausage casserole. Make this ahead in the slow cooker. Then it’s ready and warm and filling on a day when you haven’t got the energy to cook.Use plenty of veg in the casserole then you can just serve it with crusty bread or garlic bread for a quick and easy supper.Goulash, again with plenty of veg. Use grated veg like carrot, onion, courgette and very finely diced celery to bulk this out. Tinned tomatoes are good for this dish. Give it plenty of flavour with smoked paprika and garlic and chillies.Make a big salad and a tomatillo salsa to serve with lunch or dinner.I’m going to thinly slice some of the apples to make apple fritters for a treat.Enjoy your box delivery. Beth
