Hi everyone, it seems to be weeks now that we haven’t had any sun. The temperatures aren’t too bad but the sun has evaded us. We need the sun to ripen all the lovely fruits and vegetables we have growing here. So everyone is feeling a little down hearted. Fingers crossed for an up turn in the weather.Menu ideasSpicy sausage pasta.With the lack of sun my really craving a bit of comfort food and these fab, spicy, meaty sausages cooked then sliced up into a pasta dish are perfect. Comforting with just the right amount of spicy. Perfect for pizza toppings too. I cooked all of mine then used them sliced in dishes. Nice for a beer snack too!Beef chilliUsing the mince, I’ve used both packs and made a big batch so I can freeze some for later. As we’ve a glut of courgettes here I’ve snuck a grated courgette in too.Serve with baked new potatoesCourgette muffinsI’ve used honey instead of sugar and a little mixed spice. Great for picnics or even breakfast on the go.Carrot and courgette quicheGrate the courgette and squeeze out any liquid before adding to the egg mixture.But lots of grated veg is good in a veggie quicheServe with picked cucumber salad.Quick fruit saladMade with any fruit you have, peeled and sliced, serve with yogurt, cream or ice creamEnjoy your weekBeth
