Enjoying these late august days….

I really hope you’re enjoying these late august days as much as I am. The changing colours in the gardens is just amazing. We’ve had the tiniest bit of rain and every plant has sucked it right up. The borders are looking a bit “over” but I’ve already started on the cut back and they are greening up and even if I don’t get anymore flowering, the new growth is pretty and fresh.

The vegetable gardens are in full flow. Salads, fruits, greens, cucumbers, tomatoes and on the list goes. We are eating so well with all the fresh and tasty produce. We’ve even had a few melons and figs from the little green house and the little tunnel.……So what to make with all this great produce?A mid to late summer must is Panzella.

A great way of using up some stale bread but it is the most tasty tomatoey summer salad. There are loads of recipes out there but I use what I’ve got. Bread, tomatoes, courgettes or cucumber, onion, etc etc. with a great dressing of capers and anchovies and a splash of cider vinegar and olive oil.  You can leave out any of the ingredients you don’t like but be sure to use a good olive oil. The season with salt and pepper. Serve it with cold meats, cheese or boiled eggs or just a big bowl of it on its own!I’m basically going to make everything in the box into some sort of salad and light the little fire pit and sit outside in the evenings hanging on to the last deliciousness of summer. The first coffee of the day outdoors with the dogs is a treat too. The grass is damp in the mornings now and there is a coolness in the air before the sun heats the day back up and I’m enjoying it all.
