Orange & Lemon Peel Marmalade

This delicious marmalade recipe was sent in to us by a customer and is a great way to use up the peel of oranges, leftover after juicing or using the flesh in other recipes.

Ingredients
  • 6oz orange peelapproximately the peel from two large sweet oranges
  • 2pints water
  • 2.2lbs sugar
  • 1large lemonflesh and juice plus the peel
Instructions
  1. Chop or mince the peel of the oranges and the lemon very finely and soak overnight in the water.
  2. Next day, simmer slowly until the peel is soft - about 1 hour 30 minutes.
  3. Measure the amount of liquid and, if necessary, make it up to 1.5 pints.
  4. Stir in the sugar, add the lemon flesh and juice and bring to the boil.
  5. Boil rapidly for 15 minutes.
  6. Leave to stand for about 10 minutes, to prevent the peel rising to the top, then pot into hot, sterilised jars.
Recipe Notes

If you are in a hurry, soften the peel in a pressure cooker instead of soaking overnight.
If using this method, soak the peel in 1.5 pints of water and then pressure cook for 10 minutes. Turn off the heat and allow the pressure to drop gradually. Remove the lid, measure the liquid and make it up to 1.5 pints. Continue as above.
