Soda Bread

  1. Sieve flour into a large bowl and add the salt and bicarbonate of soda.
  2. Make a well in the centre and add the milk. Stir with a knife to combine the ingredients. It will come together and make a sticky ball.
  3. Turn out onto a well floured surface and form into a round shape.
  4. Place onto a floured baking tray and with a sharp knife make a deep cross in the middle to make the centre cook more evenly.
  5. Bake in a pre-heated oven at Gas 6/200C for 40 minutes.
Recipe Notes

Variations:
I added a grated carrot and a big pinch of cumin to the recipe to make the loaf more savoury and moist once it had cooled.
I also “messed” around with the flour. I used half gram flour and half plain white, because that’s what I seem to have most of in my store cupboard. It will make with most plain flours and wholemeal.
You can also add seeds or dried fruit to the dry ingredients.
This recipe is also a good way to use up milk that might be about to go off, which is a little curdled.
