Beetroot Slaw

Great in cheese sandwiches or as a colourful side dish.

Instructions
  1. Peel and grate the beetroot and carrot and slice the onion very thinly.
  2. Combine in a bowl with the mayonnaise and season to taste.
Recipe Notes

If you would rather not use mayonnaise, substitute with 1 tablespoon of olive oil and a squeeze of lemon juice.
