Lemony Spring Greens

Great with just about anything! Roast meat, stew as a side dish but also lovely at a topping for chunky vegetable soup.

Ingredients
Instructions
  1. Mix the lemon juice, zest, oil and salt and pepper together in a little bowl or jar.
  2. Steam the shredded spring greens until tender. Once cooked, allow to steam a little, whilst draining, to dry.
  3. Toss the greens in the lemony dressing and serve.

Also works very well with cabbage or kale.
