Potato Puttanesca

Although more usually served with pasta, puttanesca sauce makes a great accompaniment for potatoes too!

Ingredients

  1. Boil the potatoes until cooked through. Drain and put aside to cool.
Sauce
  1. Heat the oil and cook the onions, chilli and garlic for about 5 minutes over a medium heat then add the anchovies and cook for a further few minutes until the anchovies have melted away.
  2. Add the tomatoes, olives and capers and heat them through.
  3. Stir the sauce through the cooked potatoes and season with fresh ground black pepper. Put some grated strong cheese on top to serve if you like.
