I’m trying to get ahead with my preparation for summer and so I’m making strawberry cordial from my frozen stock from last year. The recipe is the same as if I were using fresh.
Ingredients

organic strawberriesYou can freeze them as you get them to collect enough for a batch or a double batch.

water

lemon- juice only (or 1 tspn citric acid, obtainable from the chemist's)
Instructions
Add the strawberries to a large heavy bottomed pan and pour over the water.
Bring to the boil. Remove from the heat and crush the strawberries with a fork or masher.
Add the sugar and lemon juice (or citric acid). Leave to stand for a couple of hours with a lid on, stirring occasionally to help dissolve the sugar.
Sterilise a jelly bag and strain the strawberries through it. I do this over night. Don’t be tempted to squeeze the bag because you will get a cloudy cordial.
Pour the juice into sterilised bottles and refrigerate.
Recipe Notes
You can freeze the cordial in suitable containers if you want to keep it for a long time. It never lasts that long here!
