Spicy Beetroot Soup

This is a fantastic soup for warming you up on a cold winter’s day!

Ingredients
Instructions
  1. Place the chopped onion, garlic, spices and oil in a pan and sauté over a medium heat until the onion is soft.
  2. Add the diced cooked beetroot, tin of tomatoes and stock and then simmer for 10-15 minutes or until all the vegetable are tender.
  3. Blitz with a stick blender until smooth.
  4. Taste and adjust the seasoning if necessary.
  5. Serve piping hot with a dollop of creme fresh and homemade garlic bread.
