Spiced Winter Carrot Dip

This dip is great for cold nights and is the perfect alternative to the shop bought unhealthy stuff. Serve with thin, toasted crusty bread, homemade chips, cheese on toast, poached eggs or as a side dish with roast meat. The list is endless!

Instructions
  1. Put the carrots, oil, onions and garlic into a pan with the stock and bring to the boil.
  2. Reduce to a simmer and cook until almost all the liquid has evaporated and the carrots are soft. Then add the rest of the ingredients and cook for a further 2 minutes.
  3. Then blend until you get the texture you like. We like to leave it quite rough. Check seasoning and serve warm or cold.
