Instructions
Put the carrots, oil, onions and garlic into a pan with the stock and bring to the boil.
Reduce to a simmer and cook until almost all the liquid has evaporated and the carrots are soft. Then add the rest of the ingredients and cook for a further 2 minutes.
Then blend until you get the texture you like. We like to leave it quite rough. Check seasoning and serve warm or cold.
