My take on a French cassoulet!
Instructions
Roast the sausages in the oven or under the grill until they start to colour up. Set aside.
Fry the onion and spices in a large heavy bottomed casserole dish. Add the grated carrot, the tin of chopped tomatoes, the tin of mixed beans, the stock and the herbs. Simmer for 5 minutes then add the sausages.
Cover with the lid and cook in the oven at Gas 3 / 160C for 1 hour, then remove the lid and return to the oven for a further 30 minutes.
Serve with garlic bread. I often serve with a pile of garlic croutons on top.
Recipe Notes
If you want to make this casserole go a bit further, just add a second tin of beans.
