Pan Haggerty

A traditional Northumbrian vegetarian side-dish…and great comfort food. Perfect!

Instructions
  1. Peel and thinly slice the potatoes and onions and grate the cheese.
  2. Heat the butter and vegetable oil together, in a large frying pan.
  3. Remove the pan from the heat and place layers of sliced potatoes, onions and cheese, reserving a little of the cheese.
  4. Cover the pan and cook gently for about 30 minutes or until the potatoes and onions are cooked.
  5. 5 minutes before the end of cooking time, pre-heat the grill.
  6. Sprinkle the reserved cheese over the top of the mixture and place under the grill, cooking until the cheese is golden brown and bubbling.
  7. Serve straight from the pan.
