No churn Blackcurrant ice cream

This has got to be the easiest ice cream recipe and yet it produces the creamiest, most luxurious result!

  1. Rinse the blackcurrants, removing any stray stalks, and then gently stew over a low heat until soft and bursting. Add a little sugar to taste and then leave to cool completely.
  2. Empty the tin of condensed milk into a large bowl and then, using the tin, add two measures of double cream. Whisk the mixture until it is stiff and holds strong peaks.
  3. Whirl in the cooled blackcurrant mixture. Spoon into a suitable container, cover with a lid and freeze. And that's it!
Recipe Notes

If you have a glut of strawberries or raspberries, try substituting those for the blackcurrants and make a range of flavours for your freezer!
