Lamb Curry

This tasty lamb curry is simple to make and you can leave it simmering away in the slow cooker (just make sure it doesn't dry out!). I often make this the day before and add a bag of spinach leaves as I heat it up. Serve with rice or flat breads.

  1. In a heavy bottomed pan, add the garlic, onion, oil, spices and chunks of lamb.
  2. Cook together on a low heat until the onion is soft and the lamb is just cooked and coated in the spice mixture.
  3. Add the lentils, chopped tomatoes, tomato puree, stock cube, water, coconut cream, and salt, and put a tight fitting lid on the pan (or transfer everything to a slow cooker).
  4. Leave to simmer for a couple of hours until the lamb is very tender and falling off the bone.
