Cumin Carrots

A fragrant and flavoursome accompaniment to all sorts of meat or vegetable dishes.

  1. Place the carrots in a saucepan and add just enough water to cover. Season and add the sugar.
  2. Bring to a boil and simmer, covered until 3/4 cooked and the batons still offer some resistance when pierced with a knife.
  3. In a smaller pan, heat the butter until hot and then add the cumin seeds. After about 10 seconds, add to the carrots and replace the lid, as the hot butter will splatter when it hits the boiling water.
  4. Remove the lid and continue cooking until the water evaporates and the carrots are coated with the butter and cumin.
  5. Check the seasoning and adjust as necessary. Serve.
