Beetroot & Grapefruit Salad

A fabulous zesty salad! Try adding some feta cheese or a few quartered hard boiled organic eggs for a substantial lunch dish.
A fabulous zesty salad! Try adding some feta cheese or a few quartered hard boiled organic eggs for a substantial lunch dish.
Ingredients
Instructions
  1. Wrap the beets in tin foil and roast in a medium heat oven until fork tender. Remove from oven, open the foil and cool. Once cool enough rub off the skins and cut into cubes.
  2. In a bowl, combine the cubed beets with the orange and grapefruit.
  3. Mix together the rest of the ingredients and pour over the beet mixture.
