Wow, what a difference the weather makes. It’s explosions of growth everywhere.

The veg is fabulous and this is just the start of wonderful flavours and variety that our farm produces.

We are very aware that folks are gearing up for the summer holidays so we are keeping the boxes really easy to use. Perfect for quick and easy picnics or speedy lunch and supper dishes.
Don’t forget how easy it is to make up salads in jars in the fridge ready to pull out for lunch or to pack up for a picnic. So much cheaper, more tasty and healthier than eating out. So keeping on a budget is easier too.

Here are some ideas of how to best use your box this week.

Salads made up in the fridge ready for whatever the day holds. Could just be a lazy day in the garden or an adventure climbing hills or site seeing.

Tomato salsa
Grated carrot and onion salad
Carrot sticks
Boiled eggs
Green salad
Steamed greens, courgette or sprouting broccoli with a light dressing of olive oil and a pinch of salt even some chilli flakes.
Boiled new potatoes. You could make a little potato salad or I just keep them boiled ready to reheat on the bbq or pan fry.

You can then make a salad jar with beautiful colours in layers. Ready to just pop in your picnic basket or rucksack. And off you go.

The minute steaks are perfect for flash frying for steak sandwiches. Wrapped in tin foil and eaten on the top of the hills you’ve climbed, cooked on the bbq in the garden or on the beach.
They are equally as good if you fancy making a stroganoff or stir fry. Just cut them up into strips.

The lamb koftas are so easy too. Great for the bbq or cook them in advance and take them on a picnic or into the garden. Fabulous with carrot and onion salad, flat breads or in a bun with tomato salsa. Try them as a pizza topping. Delicious!
