Beth’s Weekly Blog….

After our succesfull Soil Association inspection last week, it’s been a week of catching up on jobs, finishing things off and trying to be a bit more organised ready for spring. Because when Spring arrives, we always feel like we are chasing it. Everything hits at once, lambing, calving, sowing and guests…!!

“Busy” is how we like it but being ready and organised means you can enjoy it too.

I’m still busy painting chairs and tables for the studio because our workshops and courses start again for 2022 this week!!! If you are looking for new things to do this year, have a look at our events page on the website.

The weather hasn’t been helpful either. We’ve been bashed about by yet another storm with heavy rain, sleet and ice only seeing the sun briefly to give us hope that spring is indeed just around the corner. It can’t come quickly enough for me.

I’m really looking forward to being able to eat more meals outside and enjoy some warmer and less windy weather. We’ve been hit by storm after storm so instead of just being annoyed by it we are planning a hole load of new wind break planting. This will be great for sheltering the poly tunnels from wind but also the veg garden, livestock and my flower borders.

The borders have taken a real pounding over the last few weeks and look dreadful. I’m hoping they pull themselves together for when we are open for the NGS (National Garden Scheme) at the end of August. Finger crossed.

With the weather still very wintery here’s a few ideas of how to use your box this week; Menu ideas for this week

Carrot, ginger and orange soup. Served with gram flour flat bread and grated cheese.

Roast beef with Yorkshire pudding (make plenty of extra Yorkshires to either freeze or use as a pudding with a dollop of ice cream inside, toffee sauce and cream or for reheated leftovers)

Stir fry. Using leftover beef, greens, onions, ginger and garlic

Tomato and onion omelette with green salad and crusty buttered bread.

Shepherds Pie. I always put veg in the mince and grating it up means you can’t really tell so it’s an easy way to get everyone to eat more veg.

Apple and ginger cobbler ( it’s still winter. It’s aloud!)

Don’t forget you can add cream and cheese onto your delivery from the extras list.
